Spicy Instant Pot Butternut Squash Soup

Equipment

  • 1 Instant Pot
  • 1 Immersion Blender

Ingredients
  

  • 4 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 4 sage leaves, minced
  • 3 sprigs fresh thyme
  • 2 1/2 pounds butternut squash, peeled, seeded, and cubed
  • 3 large carrots, cut into 1-inch pieces
  • 1 stalk celery, cut into 1-inch pieces
  • 1 Granny Smith apple, cored and chopped
  • 4 cups chicken stock Can be substituted with vegetable stock
  • Kosher salt and freshly ground pepper, to taste
  • 1/3 cup heavy cream Can be omitted if desired
  • 2 tablespoons chopped fresh chives
  • 1 teaspoon ground cumin Reduce or increase according to desired spiciness
  • 1 teaspoon chili powder Reduce or increase according to desired spiciness

Instructions
 

  • Set 6-qt Instant Pot to the Saute setting. Add olive oil, onions and garlic. Saute onions until translucent and garlic until slightly browned. Stir in sage and thyme until fragrant, about 1 minute.
  • Stir in ground cumin and chili powder if desired at this point.
  • Stir in butternut squash, carrots, celery, apple, chicken stock, 1 teaspoon salt and 1/2 teaspoon pepper.
  • Set Instant Pot to Manual setting at high pressure, and set time for 10 minutes.
  • When finished cooking, quick-release pressure according to manufacturer's directions; remove and discard thyme sprigs.
  • Stir in heavy cream if desired at this point.
  • Puree with an immersion blender until desired consistency is reached; season with salt and pepper to taste.
  • Serve immediately, sprinkled with chives.

Notes

The amount of broth can be adjusted for desired thickness.
